Oregano is a popular herb that is enjoyed thoughout the world. Mostly it is used in Mediterranean and Mexican cooking. It is a perennial herb growing from 7″ to just under 3′ tall and is one of the few herbs where the aroma and flavor are more pronounced when dried. *’Raw oregano is packed with fiber, and given it’s small size, it has a major impact on the digestive system’. The medicinal value of oregano places it as one of the most powerful herbs in alternative medicine. This recipe for Chimichurri uses fresh oregano, which gives it a nice flavor boost along with the chili pepper.
1/4c finely chopped parsley
2T finely chopped oregano
2t-1T minced, seeded red chilies, to taste
4 cloves minced garlic, 2 1/2T
1/2c olive oil
3T red wine vinegar
kosher salt & fresh ground pepper to taste
Combine all ingredients in a bowl. Let stand 20 minutes to infuse the flavors into the oil. Pour over grilled steak.
May be refrigerated overnight. Serve at room temperature.
