Rosemary-Infused Lemonade Popcicles are a refreshing treat when temperatures rise. It is the herb infusion that takes this lemonade popcicle to an adult level of enjoyment. Start with a simple syrup, flavor and freeze. Play around with the herb infusion and create your own twist. Substitute mint, thyme, basil or mix two herbs together. Add muddled or whole fruit pieces.
INGREDIENTS
1c Water
1c Sugar
1T Light Corn Syrup
2 Big Sprigs Rosemary – plus a few more leaves for each popcicle
Zest of 1 Lemon
1c Fresh Squeezed Lemon Juice
DIRECTIONS
In a medium saucepan, combine water and sugar and bring to a boil over medium heat until sugar dissolves. Add corn syrup, zest and rosemary and simmer 2 minutes. Remove from heat and allow to steep for at least 15 minutes. Remove sprigs. Combine simple syrup and the lemon juice. Pour into popcicle molds along with a few leaves. Freeze 40 minutes, then add sticks. Freeze completely for 3 hours.
